My family salsa recipe


1 large can of peeled whole tomatoes
1 onion
1 green bell pepper
1 jalapeño ( may need more depending on the spice of the pepper)
1 tbsp minced garlic
2 teaspoons seasonal
1 teaspoon pepper
half a lime
handful cilantro


roughly chop the jalapeño   and add in blender with some of the juice from the tomato 
blend until it is well combined
then add the rest of the tomatoes to the blender and blend to get the consistency that you like.
then pour in a bowl
chop up your bell pepper & onion and add to the bowl
then add garlic, seasonal salt, pepper, juice front the lime & chopped cilantro 
stir  to combined
and taste with a chip. :)
you may have to add more spices to get the taste you want.
it is always changing :)

Chicken & cheese enchaldas

8 medium sized frozen chicken breast
4 large cans enchalda sauce
17 burrito size flour tortillas
2-3 bags shredded cheese
foil




IN a large sauce pan put in the frozen chicken breast with the 2 cans of enchilada sauce.
bring to a low boil and cook until the chicken is tender and easy to shred.
after turn off and let cool about 15 mins.
then start to shred chicken
( i usually take it out breast by breast and shred it on a platter then put back into the sauce)
 then I start to assemble
burrito size tortillas add some chicken and cheese with the sauce
then roll up. this can get messy
once they are all rolled it should look something like this;
I you make them earlier in the day you can just put them like this in the fridge.
if you are making them and eating soon then continue with covering them with the remaining 2 cans of sauce & cheese.
then Cover with foil and bake at
350 for 30 mins.
remove the foil when you have 5 mins left to let the cheese get harder.
and enjoy with maybe some mexican rice or and salsa & sour cream!
My favorite box rice is rice a roni :)


Chocolate peanut butter no bake cookies


2 cups white sugar
4 tbsp cocoa powder
1 stick unsalted butter
1/2 milk
1 cup peanut butter
1 tbsp vanilla
3 cups oatmeal
wax paper


In a large sauce pan boil sugar, cocoa, butter & milk. for about 1 minute.
then add peanut butter, vanilla & oatmeal
turn off burner and continue to stir until everything is well combined 
then use a spoon and drop spoonfuls onto the wax paper & let it set up - about 1 hour

33 weeks

Here is the photos from when I was pregnant with marek vs Mackenzie @ 33 weeks.
Mackenzie is definitely sitting a lot higher.
I am a lot rounder in the belly area with Mackenzie.
She is moving around like crazy.
Still affecting what I can & can't eat!

Slowly but surely getting her room together. I couldn't find some things I wanted for her room so I had to order online. Can't wait to get everything together.
Not really craving anything as of lately.

Homemade bread

So a while back when we lived in twin falls I had started making my own bread, so so much cheaper & so yummy. Not to mention I know exactly what's in it!
I got my recipe from a lady from our old ward. It makes 2 loafs. But u can freeze half for later ;)
We go threw a lot of bread so I cook 2 loafs at a time.

My moms shepards pie

2 lb Ground beef
2 cans of tomato soup
2 can green beans
1 tbsp garlic powder
1 teaspoon pepper
1/2 tbsp onion powder
1 tbsp worcestershire sauce
2 packages of betty crocker instant mashed potatoes ( herb and butter flavor)
1 cup shredded cheddar cheese
Brown your beef in a large skillet. after it is done drain any fat that is left over.
then add to the beef 2 cans tomato soup and 2 cans green beans. 
(do not add water to soup & drain the green beans before you add them)
then add all the spices & sauce
let come to a boil.
while it is boiling cook up the instant potatoes, they take only minutes!
after they cook add on top of the meat mixture
then cover with cheese!!
then put on simmer and cover the pan with a lid.
 Serve once cheese has melted! 
So yummy!

Yummy bread sticks

These things are better than Olive garden. So.. so.. Good!

1 1/2 cups warm water
2 Tbsp sugar
1 Tbsp yeast

Let sit 5 mins, then add:

3 1/2 cups Flour
1 tsp salt

Mix until smooth, then let raise for 10 mins. Roll out Dough into a large square on a floured surface. Brush with melted butter mixed with garlic. Then sprinkle with kosher salt. Fold in half. and cut in 1 inch strips, twist and place on baking sheet. Let raise for 15 mins. Bake at 400 for 15 mins or until brown. Take out and again brush with garlic butter and sprinkle with kosher salt and parmesan cheese.
